Palo Cortado
Palo Cortado is a rare type of sherry that initially matures under a layer of flor, developing into a Fino or Amontillado. For unknown reasons, the flor layer then disappears, after which the wine continues to mature oxidatively, like an Oloroso.
The result is a unique sherry that combines the richness and complexity of an Oloroso with the freshness and elegance of an Amontillado.
Only around 1–2 per cent of the grapes pressed for sherry naturally develop into Palo Cortado.

Taste
A deep mahogany-brown colour, with refined aromas of orange blossom, hazelnut, coffee, matured wood and balsamic vinegar.
